The Tandoor is a barrel-shaped pit oven made from an amalgam of special clays, oils and natural bonding agents. This form of cooking has evolved over hundreds of years starting with a home in the ground with clay patted on the walls to keep it from caving in.
The food, whether it’s chicken, lamb, fish, or shrimp is marinated for a minimum of 12 hours then skewered and broiled in the hot air of the clay oven. This intense heat sears the meat on the outside, thus locking in the juices while providing a crisp exterior.
As no fats or oils are used in this process, the food is lower in calories and is an excellent choice for health-conscious people. The only oil used is brushed on butter when the meat comes out to retain the food’s moisture.
